No, I didn't manage to fix this and I also didn't find anyone who could help me with this.
To get some quick fix for getting GA record all submitted contact forms, I've created /thank-you page with some message on it for visitors. I was able to configure that directly from GA.
I hope somebody will look at this from contact form 7, as I believe it's plugin error.
