My understanding is that you are looking to create a single Contact Form 7 which has one field (dance course) automatically filled in with the name of a selected course. The selected course is identified by the incoming link (i.e. the course page you clicked on to get to the Contact Form 7).
This sort of conditional logic is not available directly in Contact Form 7. It can be done via custom programing but you would need to be rather skilled at WordPress development using PHP.
Alternatively you could look at some of the premium Form plugins that do offer Conditional Logic including Gravity Forms, Quform and Ninja Forms.
